What you need

cup cheddar cheese

tbsp thyme

cup unsalted butter

tsp salt

tsp baking powder

cup oat flour
Instructions
1. in a large bowl, mix together oat flour, baking powder, and salt. 2. add cold butter and use a fork to cut it into the dry ingredients until the mixture resembles pea-sized crumbs. mix in thyme and cheddar. 3. add in milk and mix until a dough forms. place the dough in the freezer to chill for at least 20 minutes. 4. meanwhile, preheat the oven to 400°F and line a baking sheet with parchment paper. 5. use an ice cream scoop to scoop out dough, about 1/4 cup at a time, and drop onto baking sheet. repeat with remaining dough until completely used up. sprinkle with more grated cheddar if desired. 6. bake for 13-15 minutes until the tops are lightly browned. let cool completely and enjoy!View original recipe
