1. preheat the oven to 350°F. line a cookie sheet with parchment paper. 2. in a large bowl, mix flax egg, butter, coconut sugar, molasses, and vanilla extract until combined. 3. mix in almond flour, coconut flour, cinnamon, ginger, nutmeg, cloves, baking soda, and salt until a dough forms. cover bowl and chill in the fridge for 30 minutes. 4. use a tablespoon to scoop about 1 1/2 tbsp of dough. shape into a ball and roll in granulated sugar. flatten slightly and repeat with remaining dough until completely used up. 5. bake for 8-10 minutes. once out of the oven, sprinkle with more granulated sugar if desired and let cool completely. enjoy!
